A sixteenth century house with 21st century talent – Wilton Park marks National Apprentice Week

The latest addition to our dedicated team of in-house chefs is Apprentice Chef, Max Simmons, who gives us an insight into his scheme and future ambitions.

Tell us a bit about yourself.

I’m 19 years old and love cooking. I wasn’t sure what I wanted to do when I left school then I fell into the kitchen and have been there ever since. I am the apprentice at Wiston House and studying at Northbrook College for one year for my NVQ level 2.

What do you enjoy most about the appreciate scheme you are on?

That every day is different and that I get to learn something new every day.

“An apprenticeship can take you anywhere”, with a particular focus on higher skills to show how young people, entrepreneurs and businesses can “rise to the top” through traineeships and apprenticeships is the theme of this year’s National Apprentice Week – what do you aspire to achieve in the long term?

To own my own restaurant or be a Head Chef somewhere.

What’s your favourite thing about working at Wiston House?

The fact that I learn every day and also the people that I work with.

Do you have a favourite recipe you would like to share with us?

When I went travelling around South East Asia for four months, I picked up some amazing recipes but my favourite has to be Pad Thai.

What’s your favourite meal and why?

A good fish and chips because it’s just an all-round good meal.
