The role

To ensure consistent standards in food production and ensure that the highest quality of product is always maintained, and stock levels controlled. Ensure kitchen kept to agreed standards of cleanliness and operational repair. To assist with menu development and procurement

Key responsibilities

  • Menu development and procurement ensuring optimum stock purchased and dry goods stock levels kept to a minimum. Follow standard stock rotation protocols
  • Ensure that all food leaving the kitchen is prepared and served to the pre-agreed consistent high standards
  • Monitor the temperature, quality and portion size of all food served from the kitchen areas
  • Ensure the effective control of refrigeration and dry store goods to ensure food safety and reduce waste.
  • Ensure all areas of responsibility, including delivery, stores, cellars and refuse areas, are kept sanitised, free from dust and debris always, following strict and pre-agreed cleaning schedules
  • Ensure HACCP is in place to ensure due diligence and work in accordance with standards of Food Hygiene Certificate Level 3
  • Comply with local health and safety requirements
  • Carry out other duties as may reasonably be required from time to time

Essential skillsĀ 

  • Ability to work with colleagues in all departments in a supportive and customer focused way
  • To work flexibly and decisively to deadlines with a positive can-do approach towards your role
  • A good understanding of Health and safety requirements and the ability to risk assess your actions both dynamically and formally
  • A level of fitness sufficient to perform all the tasks required in the role

Desirable skills

  • A good understanding of Microsoft Office 365, or willingness to learn, and attend training courses to improve your ability to use such systems
  • The ability to work decisively to deal with emergencies and business critical issues
  • To be able to plan, organise and prioritise own workload
